Cookbook Sundays - Cookie Dough Brownies
Before I do anything, like discuss how unphotogenic these brownies  turned out to be, I want to thank two fabulous fellow bloggers.  Heather  from Girlichef and Tia from Buttercream Barbie.   I'm pretty hopeless at anything computer-related and the only reason I  managed to do a blog in the first place was because Blogger makes it  easy enough that even someone like me can figure it out.  What I  couldn't figure out, no matter how many different instructions I read,  was how to do a blog badge/button.  Heather pointed me to her website  where she has a fantastic tutorial on how to make a blog badge.  Best  instructions I've ever read.  They make complete sense and in minutes  you have your badge.  If you have a blog and want to make your own blog  badge, head here.  Thanks Heather!

My recipe today came from a magazine cookbook, but since cookbook is in  it's official description I figured I could use it.  You know those  little cookbooks that you see while waiting in line at the checkout  counter at the grocery store?  Taste of Home, Bisquick, Pillsbury, etc.   Well  I just love those little books, I always have.  I have an  embarrassing number of them too, many from the 90's.  I was going  through some of them the other night and found these cookie dough  brownies from the Pillsbury 36th Bake-Off Classic Cookbook from 1994.   
They're super easy, especially if you use a boxed brownie mix as the  recipe states, which I did.  The cookie dough part actually really does  taste like cookie dough too.  You could probably add some chocolate  chips to the cookie dough filling although I'm not sure if that might be  TOO much chocolate (if there is such a thing).  These are extremely  moist and gooey.  I pretty much annihilated these suckers taking them  out of the pan though so had a hard time with the photos.  I put them in  the fridge and then when I cut them the glaze cracked.  So I left them  out a while but that didn't work either.  Tasted great but not  cooperative at all for the camera.  Anyway, they may not look pretty but  these are tasty.  They are fairly rich though, so small pieces will  suffice.  And definitely don't overbake the brownies.  You want them  nice and moist, not hard and dry as dust.

NOTE:  Canadians, I'm not sure if we can even get  brownie mixes up here for a 13 x 9 pan.  All I've ever seen are the  brownie mixes for an 8 x 8 or 9 x 9 pan.  If you can't find the bigger  box you have two choices.  Simply buy two boxes and make it in a 13 x 9  pan or buy one box, make it in an 8 x 8 or 9 x 9 pan and halve all the  ingredients listed below.  That's what I did so I have a smaller batch  of brownies.

Cookie Dough Brownies
Brownie
1 pkg. Pillsbury Fudge Brownie Mix (or whatever brand you want)
1/2 cup water
1/2 cup oil
1 egg
1/2 cup semisweet chocolate chips
Filling
1/2 cup butter or margarine, softened
1/2 cup firmly packed brown sugar
1/4 cup sugar
2 T milk
1 tsp. vanilla
1 cup all purpose flour
Glaze
1 cup semisweet chocolate chips
1 T oil
3/4 to 1 cup chopped walnuts
Heat oven to 350F.  Grease bottom of 13 x 9 pan.  In large bowl, combine  brownie mix, water, oil and egg; beat 50 strokes by hand.  Stir in 1/2  cup chocolate chips.  Spread in greased pan.  Bake at 350F for 33 to 35  minutes.  DO NOT OVERBAKE.  Cool completely.
In large bowl, beat butter, brown sugar and sugar until light and  fluffy.  Add milk and vanilla; blend well.  Add flour; mix well.  Spread  over cooled brownies.
In small microwave-safe bowl melt 1 cup chocolate chips and 1 tablespoon  oil until chocolate is just melted.  Stir until smooth.  Carefully  spoon glaze over filling; spread to cover.  Sprinkle with walnuts,  pressing down slightly.  Cut into bars.  Store in refrigerator.
Makes 36 bars.

Well, if you're like me, you have loads of cookbooks but don't use them  nearly enough. I have far too many cookbooks that are just gathering  dust on my shelves and it's high time I use them. Once a week I plan on  making a recipe I haven't made before from one of my cookbooks and  posting it on Sunday. 
I would love for you to join me. It's very easy. Just link to any blog post, past or present  (you needn't have made it this week) where you made a recipe using one  of your cookbooks.
